The biggest advantage of clarified butter is that you can fry in it at high temperature without worrying about burning. Thanks to this, there is no need resigning from a unique taste of dishes prepared in butter or with its addition.
What characterises clarified butter is its unique nutty aroma and excellent storage properties.
It can be kept in the refrigerator for half a year.
Recipe:
Heat the butter in a heavy-based saucepan.
Once melted, reduce the heat.
Don’t allow it to bring to the boil.
Constantly remove the foam that creates while simmering.
When the foam stops flowing, remove the butter from the heat and set aside to cool slightly for about 15 minutes.
Filter through some gauze into a glass container: a jar, a glass or a cup.
