Warm up the honey until melted. Pass the flour through a sieve into a mixing bowl. Add in the warm honey and stir. Gradually combine with the remaining powdered ingredients: sugar, spices and baking soda. Finally, stir in the eggs and butter. When everything is mixed well, slowly add the warm milk. Knead the dough for 8-10 minutes. When it is ready, divide into portions. Roll out each portion and cut out your gingerbread cookies. Bake them in the oven preheated to 180°C for 10-15 minutes. Store the gingerbread cookies in a sealed box with apple quarters. (Remember to change the quarters for new ones every few days).
