Delicious casserole for the first day of school

Ingredients

The beginning of September is still summer, so let’s use summer seasonal vegetables in their healthy bounties 🙂

We suggest a proven and delicious way of serving veggies in a form attractive to children. It is a really great lunch or dinner idea for the first day of school 🙂

  • 4 medium-sized potatoes
  • ¼ differently coloured peppers, e.g. yellow, red or green
  • 1 small scooped out zucchini
  • 1 medium-sized onion
  • 0,5 kg mincemeat of chicken or turkey breast
  • 1 clove of garlic
  • ½ a bunch of parsley
  • ½ a cup Łaciate milk: 0%, 2% or 3,2% fat, optionally
  • 4 tablespoons grated Jantar ripened cheese
  • 1 egg
  • 1 tablespoon Łaciate extra butter
  • Salt, pepper and nutmeg
Description and Recipe

Grease a casserole tray with Łaciate extra butter. Cut the potatoes into slices and arrange them evenly on the bottom of the tray. Place other chopped vegetables in layers: onions, peppers and zucchini. Delicately sprinkle the layers of vegetables with salt and pepper, scatter over the chopped parsley. Leave some of it for sprinkling the ready-made dish.

Then lay the mincemeat (chicken or turkey breast) previously seasoned with salt, pepper and crushed garlic. Once the meat is placed as the middle layer, start arranging the vegetables again: potatoes, onions, etc. Press the casserole down with your hands.

Cover with a lid or aluminium foil and bake in the oven preheated to 200°C for about ½ an hour. After this time, remove the cover and add the sauce: the mix of Łaciate milk, the whisked egg and Jantar cheese. Make sure if there is enough salt or pepper and jazz it up with a dash of nutmeg. Put the casserole in the oven for another 30 minutes without cover.

If you want to shorten the time of baking, fry all the ingredients in oil or butter before you arrange the casserole in layers. However remember, this method of preparation will surely add some calories 😉
